Egg with asparagus and parmesan cheese

The recipe is proposed from TRATTORIA ALLA RUOTA (Mazzano di Negrar, VR)

Ingredients for 4 people:
200 gr of green Asparagus
4 eggs of Gallina Grisa della Lessinia (a native breed of chicken from Lessinia Mountains)
100 gr of Parmesan Cheese
Extra virgin olive oil

Peel the asparagus, cut into round pieces and blanch in salted water. Dry them well and season with extra virgin olive oil. Separate the egg yolks from the whites. Butter four small cast-iron casserole and lay inside each one the asparagus round pieces to form a nest. Put the yolk in the center of the nest, then grate on it the Parmesan cheese. Whisk egg whites with a bit of salt till pale and thick and place it over the Parmesan cheese. Bake for 12 minutes at a temperature of 170 ° C and serve immediately, hot, before it collapses!
